How to make a Pineapple Daiquiri
Lots of recipes call for adding pineapple juice to the standard Daiquiri recipe while slightly lowering the amount of lime and simple syrup, but I'm here to tell you there is a better way.
Use homemade pineapple syrup!
Now hold on a minute! Don't give up on this recipe because it uses an ingredient you don't have. Pineapple syrup is super easy to make and is well worth it for this Daiquiri variation.
Homemade pineapple syrup recipe
The process is really simple.
Start by putting little pieces of fresh pineapple in small pot. Cover with sugar, stir to coat the pineapple, then let sit for several hours.
The sugar draws out the flavorful liquids in the pineapple and then you add water, cook it briefly to dissolve the sugar and strain it into a container for storing in the fridge.

It won't take much effort and when you're done you can also use the syrup to make a tropical Old Fashioned or add a splash to your gin and soda.
Choosing your Daiquiri rum
A Pineapple Daiquiri is great with both dark and white rums.
If you want a more crisp bright classic Daiquiri flavor choose a white rum. A dark rum ads more vanilla, caramel, and spice background flavors which can also be delicious if that's what you like.
Some great white rum options are: Flor de Cana Extra Secco, Plantation 3 Stars, and El Dorado 3 yr. A few of my favorite dark rums for cocktails include: Plantation Original Dark, and El Dorado 8 yr.
Avoid rums that are super super cheap. A decent rum is not that expensive and if you're looking for a budget option try the Plantaion 3 Star.
Pineapple Daiquiri
Ingredients
- 2 oz Rum - any style
- 1 oz Fresh Lime Juice
- 3/4 oz Pineapple Syrup - recipe below
Instructions
- Add ingredients to a cocktail shaker.
- Add ice and shake hard for about 12 seconds.
- Strain into a chilled cocktail glass and enjoy!
